Yeah the staff are very respectful and patient with me, Yeah it looks like once the permanent crown is placed it will have more material so it wont be as flat, I didn’t know they could do that

Hmm, that's interesting. Usually, the permanent crown is designed to match your bite exactly, so it shouldn't feel larger or taller than the temp. But sometimes dentists intentionally leave the permanent crown slightly higher initially because your bite can adjust a bit over time. I've had a similar experience where my permanent crown felt noticeably bigger at first, but after a few days, it settled in and felt totally normal.
Did your dentist mention anything about giving it a few days to see if it settles naturally? Or did they seem open to adjusting it more if needed? It's always tricky because you don't want to file too much off right away—once it's gone, it's gone...
Had something similar happen with my crown last year. At first, it felt like I had a giant marble stuck in my mouth, lol. Dentist said it was normal and to give it a few days. Sure enough, after about a week, it settled in and felt totally fine. Guess our mouths are just picky about new stuff. I'd probably wait a bit before asking them to shave it down more—can't exactly glue the bits back on if they go too far...
